Herbaria nutmegs come from controlled organic cultivation in the Indonesian regions of Siau-Ambon and Ambon Ternate, above the northern tip of Sulawesi. The nutmeg trees thrive in the climatic conditions there. It is not for nothing that Indonesia is the largest producer of nutmeg in the world. Botanically, the fruit is not a nut, but a single-seeded berry. Berry-like fruits initially develop from the tree blossoms. These burst open after 7 to 9 months, then reveal their seeds, and finally fall from the tree. During harvest, the seeds are then freed from the pulp and arils and dried for several weeks until they can finally be used as typical nutmeg. The nutmegs have a warm, resinous, slightly bitter aroma. Nutmeg refines potato dishes and creamed vegetables such as spinach and savoy cabbage. Stews, sauces, and even the topping of tarte flambée are perfectly rounded off with a pinch of nutmeg.
