The lower, yellowish part of the stigma is of inferior quality and is therefore pinched off the dried stigmas using a spoon. Only by doing this can you obtain high-quality saffron with intense color and aroma. In Taliouine, the saffron produced in this way is called "Saffron première catégorie."
