Asafoetida

Asafoetida, also known as asant or hing, is a popular spice whose many beneficial properties are already documented in the “Astanga Hridaya”, one of the oldest Ayurvedic texts.

Because of its pronounced, intense odor, it is used very sparingly (less than a pinch). Asafoetida is an ideal alternative to onions and garlic, which are not used in Ayurvedic cuisine.

Highly valued for its Vata-balancing properties, asafoetida is particularly popular for enhancing bean, curry, and dal dishes.

Directions:
